Directions:
1. Select Your Equipment

2. Rinse Thoroughly
Rinse the mung seeds thoroughly to remove any stones, debris, and other bits that are not seed material. Use cold water of about 70 degrees F (21 degrees C) which you will drain when you are done with the rinsing.
3. Soak Overnight
Place 4 tbsp of the rinsed mung seeds at the bottom of the jar. Fill the jar until it's about 3/4 full. Secure with the lid. Soak the seeds for around 8 hours at room temperature.
4. Drain The Seeds
This stage is when the importance of the sprouting lid comes in. Drain the water from the jar and rinse with fresh water and drain.
5. Continue To Rinse The Seeds
Rinse again. Let freshwater into the pot and keep rinsing. To speed up the process, rinse 3 to 4 times every day.
This process may take about 2-3 days. Be gentle as you drain and rinse so that you do not damage the budding sprouts. To ensure all the water drains out quickly, you can invert the jar.
6. The Last Harvest Rinse
Mung seeds take about 3 to 4 days to sprout fully. When ready to harvest, do the final rinse. Be sure not to leave the seeds out for too long since the leaves may start growing. Wash them adequately with fresh water and drain.
Remove the Mason sprouting lid from the jar and place the seeds in a bowl. Take out the mung seeds that have not sprouted. Store the sprouts in the refrigerator. They should stay fresh for around a week.
