As Jun Tea is brewed using raw honey instead of can sugar, the SCOBY needs to be different from the typical one.
Jun SCOBYs can feed directly on raw honey to ferment the batch. The range of Jun SCOBYs is often rather limited due to the special nature.

The Ying Yang Blend is the perfect choice for brewing kombucha tea. It contains both white and black tea for getting the best tasting blend.
Super Green is our green tea of choice for brewing kombucha. For its tastes, purported health benefits and energy boosting properties.
Blends of tea are difficult to produce yourself. When blending teas for kombucha it's important to not create a blend that contains natural oils or other ingredients which can spoil your batch.
Therefore we would recommend Get Kombucha's blend which has many positive reviews and feedback. Also tastes great!
Raw, USDA Organic, Non-GMO Cane Sugar, is the recommend sugar of choice for your ferment.
Kombucha is often drank for its health benefits so choosing the highest quality ingredients is paramount.
Kirkland's Organic Cane Sugar is what we would recommend.
Jun Kombucha uses a Jun SCOBY and Raw Honey to create a unique blend. Choosing the right honey can be confusing.
Whilst we would always suggest locally sourced organic raw honey if you're looking to order it online this is what we would recommend:
Nature Nate's Raw And Unfiltered Honey which comes from Texas.
If the pH of your brew is too high, even after adding your starter tea, you'll need to add some white vinegar to reduce it.
White vinegar will not alter your brew's taste too much but will reduce your pH.
We would recommend to use the same vinegar as when pickling: This 1 gallon jug will last a long time!
Kombucha Jar Covers

A hinge bottle is the absolute best option for home brewers. They're air tight, easy to secure and can put them in your bag and drink during the day.

An accurate stick on thermometer is essential to brewing a batch. Being able to check on the brew, quickly and adjust accordingly is necessary.
Finding a good crystal stick on thermometer is difficult. Most may be low quality and not helpful at all!
pH Testing Strips
Keeping your batch within the critical pH range is not only necessary to achieve a great tasting brew but also to be safe for human consumption.
